Nyetimber Classic Cuvée NV 75cl
Nyetimber gave English sparkling wine its founding argument. Back in 1988, when the idea of world-class fizz from West Sussex still sounded faintly eccentric, this was the first estate to plant Chardonnay, Pinot Noir and Pinot Meunier on English soil. The instinct behind that gamble was geological: the chalk and greensand of southern England share a lineage with Champagne, and the cool climate draws out the fine acidity that serious sparkling wine is built on.
The Classic Cuvée is the house signature, drawn from vineyards across West Sussex and Hampshire. It leans on Chardonnay, roughly 55 to 65 per cent, with Pinot Noir and a smaller measure of Pinot Meunier filling out the frame. Made by the traditional method, it rests more than three years on its lees before release, and you taste every month of that patience.
Pour a glass and the mousse arrives fine and persistent, the colour a pale gold. The nose is toasty and gently spiced, the autolytic warmth that only long lees ageing gives you. On the palate there's honey, almond and pastry, then orchard fruit, baked apple and a twist of pear and citrus, held bright by an acidity that stops anything turning heavy. The finish lingers, toasted and fruited at once.
Open it as an aperitif or carry it to the table, because it has the backbone to see a meal through rather than fade after the first pour.
How to Serve
Serve at 8–10°C, and reach for a white-wine glass over a flute. The wider bowl lets the aromas open and shows off the fruit that a narrow flute traps.
