Nicola Gatta's Cuvée Nature, with extended lees ageing - '30 Lune' (one month) - represents traditional method winemaking crafted with meticulous precision. The Nature designation signals minimal dosage, allowing pure wine expression. The wine draws from carefully selected parcels, crafted with respect for the fruit and minimal winemaking intervention. The aromatics suggest quality and care: white stone fruit, citrus, subtle brioche, with a pleasant minerality. There's also yeast-driven notes from ageing, alongside subtle white flowers and hints of almond and honey. The palate demonstrates the purity that minimal dosage and traditional methods achieve. The mousse is refined and persistent, delivering flavours of remarkable definition: white stone fruit, subtle citrus, with undertones of almond and honey. The acidity is bright and refreshing, providing both structure and drive. The mid-palate exhibits concentration befitting quality production. Nicola Gatta is quietly redefining what sparkling wine from Lombardy can be. Made from traditional Champagne varieties and fermented by the traditional method, this cuvée spends 30 moons, around 29 to 30 months, on the lees with zero dosage. The result is precise, complex and elegant, but with far more energy than the category often suggests.

Gatta works just under six hectares of limestone vineyards in Gussago, Franciacorta. He stepped away from the DOCG to preserve his creative freedom, choosing instead to work without the constraints of the appellation. His approach is deeply minimal intervention: biodynamic farming, spontaneous fermentation with indigenous yeasts, no added sulphites, no filtration and no clarification. Ageing follows the lunar calendar, giving the wine its name and its rhythm.
