
2025 Kate Organic Sauvignon Blanc IGP Oc, Aubert & Mathieu
Aubert & Mathieu are two friends who set out to make honest, well-made wine in the Languedoc without the fuss — and Kate, their organic Sauvignon Blanc, is one of their most likeable. It carries the IGP Pays d'Oc classification, made from Sauvignon grown under the Mediterranean sun on clay-limestone soils in the south of France.
Being a warm-climate Sauvignon, it reads differently from a razor-sharp Loire or Marlborough version — rounder, more exotic, sunnier. The grapes are picked at night to lock in freshness, then fermented cool and left on fine lees to build a bit of texture. It's certified organic, and good enough that KLM pour it in business class.
The nose leads with exotic fruit and citrus, white flowers and a green, herbal lift — there's an asparagus note in there if you go looking. The palate is tense and slender, grapefruit and herbs carried on vibrant acidity to a lightly mineral finish. Fresh, clean and easy to like.
At around £18 it's a smart weeknight white with organic credentials and real charm. Buy a couple for the fridge.
How to Serve
Serve well chilled, 8–10°C, in a standard white wine glass. Drink it young and fresh; no decanting, no cellaring.
Where to Drink It
The Wolseley for a light lunch. Dandy for something modern and relaxed. Planque for a natural-leaning list and good company.
Food Pairings
Grilled shellfish off the plancha, or a spring asparagus risotto — the wine practically points you there. A goat's cheese salad works a treat too.
