
Organistrum Albariño, Martín Códax 2022 75cl
Organistrum is Martín Códax's grown-up Albariño — the one that swaps the usual stainless-steel zip for the weight and warmth of French oak. If you think Albariño can only be a lean summer white, this is the bottle that changes your mind.
It comes from Val do Salnés in Rías Baixas, the coolest, most Atlantic corner of Galicia and Albariño's spiritual home. Martín Códax select southeast-facing vineyards for this cuvée, ferment in French oak from Allier and let the wine sit on its lees, with malolactic fermentation softening the natural bite. The whole point, as the producer puts it, is balance between the grape's varietal character and the barrel.
The colour is a bright, deep straw with real viscosity in the glass. The nose is layered — quince and apple compote alongside gentle toast, vanilla and a savoury, cocoa-tinged edge from the wood, with citrus and white stone fruit underneath. The palate is broad and elegant, the oak and fruit woven together, the acidity well integrated rather than sharp. This drinks with genuine texture and length.
Pour this when a crisp Albariño feels too slight — a white for autumn evenings, or for a meal that needs a wine with some presence. At around £22 it offers a more serious, oak-aged expression from a benchmark producer, and it is worth the step up.
How to Serve
Serve at 10–12°C, warmer than you would a young Albariño, in a broad glass so the texture and toast come through. Drinkable now and over the next few years.

Food Pairings
Grilled turbot or a plate of scallops with a little butter is ideal. It also stands up beautifully to roast chicken, the oak giving it enough weight to cope.
