
Macallan Sherry Oak 12 Year Old
If one whisky defines the sherried Speyside style, it's this one. The Macallan 12 Sherry Oak is matured entirely in oak seasoned with Jerez oloroso — no bourbon casks, no shortcuts — and it's the bottle that built the distillery's reputation for richness.
Macallan sits above the River Spey at Craigellachie, and the house puts enormous stock in its casks; the sherry-seasoned oak, shipped from Spain, does most of the heavy lifting on flavour and colour. The 12 is the most accessible expression of that philosophy, and still a benchmark by which other sherried malts get judged.
The nose is all dried fruit — raisin, sultana, a bit of fig — with vanilla, ginger and a whisper of wood smoke. The palate is smooth and full: sherried fruit, orange, clove and a nutty, resiny oak underneath. At 40% it's rounded and easy, no water required. The finish is medium-long, sweet and gently spiced.
A classic after-dinner malt, and a fine introduction to what sherry casks can do.
How to Serve
Neat in a tulip glass at room temperature. It doesn't need water, though a drop won't hurt. Leave the ice in the freezer.

Food Pairings
Made for savoury weight rather than pudding. A wedge of aged Manchego, some cured ham or a handful of walnuts suits it, with a few raisins on the side if you want to nod to the sherry.
