
Giffard Egg White Syrup 70cl
Giffard, of Angers in France, has been making syrups since 1885, and built this one for sours. Unlike a plant-based foamer, it contains real egg white alongside cane sugar and water, so it delivers the genuine silky foam and rounded body that egg white gives - with none of the cracking, separating or waste. One bottle, measured straight in.
It does double duty: foaming agent and a touch of sweetness in a single pour. Add it to anything in the sour family that wants a dense, glossy head and a softer mouthfeel.
How to Use
Roughly 15-20ml per drink, shaken hard with ice - a dry shake first builds the best foam. Contains egg, so keep refrigerated after opening. Not suitable for vegans. 70cl bottle.
