Giffard Agave Syrup 1Litre
From Giffard of Angers, established 1885, this is a pure agave nectar syrup - around twice as sweet as cane sugar, so a smaller pour does the same work. The flavour is clean and neutral-sweet with a faint honeyed edge, which lets the base spirit lead rather than fighting it.
This is agave nectar, not a distillate, so it carries no alcohol and dissolves readily even in a cold shaker. Agave is the natural sweetener for agave-spirit drinks, where it echoes the tequila or mezcal instead of masking it. Because it is sweeter than a standard sugar syrup, dial the volume down when you swap it in for one - and it suits a vegan bar, being plant-derived.
How to Use
Around 10-15ml per drink; start light given the sweetness and adjust to taste. Shake or stir as the recipe dictates. Refrigerate once opened. Supplied in a 1-litre bottle.
