The agave is a blend drawn from both the highlands and the lowlands of Jalisco, all 100% blue Weber. The highland fruit brings a bright, citrusy top note; the lowland fruit adds an earthy weight underneath. It's slow-cooked and slowly distilled, and the result is clean without being characterless.
Expect a delicate, aromatic nose — fresh agave, citrus, a faint thread of vanilla. The palate is crisp and lively: fresh agave leads, then grapefruit, then a little fresh-jalapeño green heat that stops it feeling soft.
