
2023 Riesling Organic , Trimbach
Trimbach have been making Riesling in Ribeauvillé since 1626, and their house style is the reference point for the whole grape: bone-dry, taut, almost austere in its youth. From the 2023 vintage the entire estate is certified organic, which is what the label here is flagging — the same classic dry Riesling, now farmed to those standards.
Where much of the wine world sweetens Riesling, Trimbach point-blank refuse. This is fermented dry and raised in stainless steel to keep everything clean, mineral and precise. It's Alsace Riesling exactly as the family intends it.
The nose is fresh and lifted — lemon, pear, a little tropical fruit and candied orange over white flowers. There's a fine graphite, almost flinty note running underneath. On the palate it's crisp and focused, driven by lively acidity, finishing long, clean and distinctly mineral. Not a hint of sweetness anywhere.
This is a food wine first and foremost, and a brilliant house Riesling to keep around. At around £25 it punches well above its weight and will hold happily for a few years if you fancy tucking a bottle away.
How to Serve
Serve at 8–10°C in a white wine glass. Too cold and you'll numb the aromatics — let it warm slightly. No decanting needed.
Where to Drink It
The Wolseley for a cold plate and people-watching. Bentley's with the seafood. A Din Tai Fung or good dim sum spot — dry Riesling loves the table.
Food Pairings
Choucroute if you're being classic, but it's just as good with roast pork or a plate of dim sum. The acidity makes it a natural with anything fried.
