
Hibiki Harmony
Hibiki Harmony is the bottle that introduced a lot of people to Japanese blended whisky, and it earns the attention. Suntory draws it from malt and grain whiskies across all three of its distilleries: Yamazaki for richness, Hakushu for green freshness, and Chita for the soft grain that knits it together. The famous 24-faceted bottle nods to the Japanese seasons, and the whisky inside has the same sense of everything sitting in its right place.
It is built to be approachable rather than to challenge you, but there is real craft underneath. The blend leans gentle and bright, with just enough structure to keep it interesting on a second pour.
The nose opens with orange peel, white chocolate and a little honey, with a soft floral lift behind it. The palate carries that through: candied citrus and honeyed sweetness up front, then a thread of creamy vanilla and a faint incense note that marks it out as Hibiki. A touch of clove and oak gives it backbone before a clean, gently sweet finish that fades without any rough edges.
Versatile is the honest word here. It rewards slow sipping but does not sulk if you stretch it into a highball.
How to Serve
Lovely neat in a tulip glass, but it genuinely shines in a highball: build it tall over ice with cold soda and a twist of orange. A single large cube and a few drops of water also opens it nicely.

Order it as a highball at Sexy Fish in Mayfair, work through the Japanese list at Murakami in Covent Garden, or pull up a stool at Trailer Happiness in Notting Hill.
Food Pairings
Great with lighter Japanese plates: sashimi, chicken yakitori, prawn tempura. The orange-citrus note also plays well with duck or roast chicken.
