Fee Brothers has bottled bitters and cocktail mixers in Rochester, New York since 1863 - five generations of the family later, it is still going. Fee Foam is their vegan answer to egg white: a taste-neutral foaming agent that builds a clean, lasting head on shaken drinks without any egg or dairy. A blend of water, emulsifiers, plant-friendly stabilisers and a little citric acid does the job aquafaba or egg white would, minus the worry over freshness and allergens.
Bartenders reach for it whenever a drink wants froth. A few dashes go into the shaker before you add ice, and because it carries no flavour of its own it slots into anything in the sour or fizz family without shifting the balance of the drink. A hard shake still gives the best texture.
How to Use
4-6 dashes per drink, added before shaking. Shake hard with ice to aerate. Store upright at room temperature with the cap closed - no refrigeration needed. Supplied in a 15cl dasher-top bottle.
