Waris-Larmandier, Particules Crayeuses Extra Brut Grand Cru NV - 75cl
Particules Crayeuses represents the distilled essence of Côte des Blancs terroir: a non-vintage expression of Chardonnay from chalk-rich soils, unified by Waris-Larmandier's philosophy that great wine flows from respect for place. The wine draws from a carefully calibrated blend of vintage components and vineyard parcels. The aromatics immediately speak of place: fresh hazelnut, white stone fruit, citrus zest, and a compelling minerality with hints of flint and chalk. There's also subtle brioche and white flowers. The palate demonstrates minerality of remarkable focus and definition. The mousse is refined and persistent, delivering flavours that develop with clarity: golden apple, pear, subtle citrus, with undertones of almond. The acidity is bright and energetic without aggression. The mid-palate has excellent definition. How to Serve: Serve at 8-10°C in proper flutes. Food Pairings: Exceptional with oysters, scallops, and fine white fish.
