Waris-Larmandier, Lieu-dit 'Les Bauves' 2014 - 75cl
Les Bauves represents a parcel-specific expression of Cramant's distinctive terroir. Waris-Larmandier, a grower of considerable talent, has created a vintage Blanc de Blancs of remarkable focus and mineral precision, capturing the essence of this particular vineyard site with uncommon clarity. The 2014 vintage, cool and structured, provided ideal conditions for Chardonnay of such character. Waris-Larmandier has crafted a wine that expresses both the vintage's essential character and the parcel's distinctive terroir: fresh hazelnut, white stone fruit, citrus zest, and a compelling minerality with hints of flint and chalk. The aromatics suggest meticulous vineyard care and harvest timing, with subtle brioche notes and white flowers emerging as complexity develops. The palate demonstrates the refinement characteristic of Cramant Grand Cru Chardonnay. The mousse is refined and persistent, delivering flavours of remarkable definition: golden apple, pear, subtle citrus, with undertones of almond. The acidity is bright and refreshing, providing both structure and drive. The mineral character is particularly notable. How to Serve: Serve at 8-10°C in proper stemware. Food Pairings: Ideal with oysters, scallops, and fine white fish.
