La Cuvée is the bottle Laurent-Perrier built its name on, and the house style is unusually easy to spot: Chardonnay-heavy, low dosage, no oak, nothing to hide behind. Where a lot of non-vintage Champagne leans on richness, this one leans on clarity.
Citrus first. Then white peach, then a warm note of brioche from time on lees. The mousse is very fine, almost creamy, and the finish is dry and clean. This is Champagne that refreshes rather than fills you up, which is why it works before dinner as well as right through it.
Under £50 from a house this serious is fair going. Keep one cold at all times and you will find reasons.
How to Serve
8 to 10°C in a white wine glass. Straight from the fridge is usually a degree or two too cold, so give it five minutes.
Where to Drink It
The Wolseley, poured while you are still deciding what to order. Bentley's, at the oyster bar. Dandy on Maltby Street, for something more relaxed.
Food Pairings
Salted almonds and a bowl of olives will do. Push it a little further with fritto misto — the acidity cuts straight through the fry.
