Volcán de mi Tierra does something most blancos don't: it blends agave from two very different parts of Jalisco. Fruit from the highlands brings sweetness and floral lift; fruit from the lowlands around the volcano brings earth and pepper. Married together and left unaged, they give this blanco more shape than the usual crisp-and-clean template.

The house is a partnership rooted in the shadow of the Tequila volcano, and terroir is the entire pitch — hence the name, “volcano of my land.” The agave is 100% blue, and the two-region approach is what sets it apart on the shelf.

The nose is fresh and layered: green agave, orchard fruit like apple and pear, a little citrus and a peppery, faintly smoky edge. The palate runs herbaceous and grassy with a mineral streak, then a genuine kick of black pepper and a jalapeño-like warmth that stops it ever feeling soft. The finish is dry and spiced. This is a blanco with opinions — sip it neat and it rewards attention, or let that pepper punch through a cocktail.

Good for the drinker who's moved past the entry-level and wants character in their unaged tequila, whether neat or stirred into something serious.

How to Serve

Lightly chilled and neat in a copita to read the two regions, or in a punchy Margarita where the pepper cuts through. A cube of ice softens the spice if you'd rather.

Tayēr + Elementary for a considered agave menu. Swift in Soho for a spirited crowd. Scarfes Bar for a stylish early one.

Food Pairings

Excellent with grilled prawns and chilli, or a bowl of guacamole with plenty of lime.
