Crafted by Dermot Sugrue, the former head winemaker at Nyetimber and one of the leading figures in English sparkling wine, this cuvée is his personal project, a labour of love born from South Downs vineyards with serious pedigree. The 2018 vintage is a traditional-method blend of 60% Chardonnay and 40% Pinot Noir, sourced from chalky, coastal plots. Aged over 40 months on lees, it shows crisp citrus, green apple, flinty minerality and toasty brioche, with fine bubbles and superb structure. Fresh, elegant, and quietly powerful. The name? A nod to the early setbacks, birds devoured the first harvest, but the dream survived. And it paid off: this bottle has gained cult status among insiders and sommeliers alike.
