
Seventy One Gin 200ml
Seventy One is a distilled gin given a whisky-maker's treatment: seventy-one nights resting across three cask types — Spanish virgin oak, American-oak casks that held Pedro Ximénez sherry, and French oak from cognac. The wood is what gives it the amber glow and the depth.
Dreamed up by fashion photographer Mert Alas, the gin carries an elaborate botanical bill under the oak, including rose petals, grapefruit peel and the fleeting Queen of the Night cactus flower, which opens for one night only.
Expect vanilla, toasted oak and a wisp of smoke on the nose. The palate arrives in layers — almond and vanilla, then sultana and dark chocolate from the sherry cask, then pear and acacia honey from the cognac wood, with juniper lingering quietly beneath. The finish is long and softly spiced. At 40% it's made for slow, neat sipping; tonic would only smother the cask character.
The 200ml bottle is the sensible way in — enough to spend a few evenings with before you commit to a full-size bottle.
How to Serve
Neat in a nosing glass, room temperature or lightly chilled, no more than a single big cube. Give it air and let the cask notes unfold.
Where to Drink It
Black Rock, Shoreditch — laid-back and built for sipping spirits. Bar Lotus — a quiet corner and an unhurried pour. Scarfes Bar at the Rosewood — plush and low-lit for after dark.
Food Pairings
Try it beside a square of dark chocolate or a few salted almonds — simple things that echo the sherry-cask sweetness.
