Clos du Verseuil is a walled monopole — Domaine Y. Clerget farm it and no one else, a rare thing in Burgundy's patchwork of shared vineyards. It sits in the heart of Volnay, the Côte de Beaune village prized above all for finesse rather than force. Thibaud Clerget now runs the domaine his family has worked for generations, and his touch here is light and precise.

Volnay is the most delicate red in Burgundy, and this shows exactly why. Red cherry and wild strawberry, a lift of violet, a thread of earth and warm spice underneath. The tannins are silken, the acidity bright and lively, and the whole thing glides rather than grips. Approachable already, but structured to reward five to ten years in the cellar.

Open this when the wine is the point of the evening.

How to Serve

Serve at 15–16°C in a large Burgundy glass. A short decant helps a young bottle; otherwise give it time to unfurl in the glass.

Where to Drink It

Noble Rot (Lamb's Conduit Street) for the wine list alone. Scott's in Mayfair for something dressed-up. Or The Wolseley for old-world glamour.

Food Pairings

Roast poussin or guinea fowl suits the wine's delicacy — nothing too heavy. Coq au vin, or a plate of mushrooms on toast, flatters that earthy undertow.
