Champagne Chavost Ratafia Solera represents an expression of pure tradition - a wine that harks back to centuries of Champagne winemaking heritage whilst remaining utterly relevant and delicious. Ratafia, the traditional Champagne aperitif, emerges from a careful blend of grape juices and aged brandy, creating something sweet, complex, and genuinely compelling. This solera version, aged in a fractional blending system, develops remarkable depth and consistency.
The solera system - wherein younger ratafia is blended with older spirit, creating a continuity of character across vintages - ensures that each bottle carries within it the essence of decades of careful winemaking. Chavost, a respected producer in the Champagne region, has maintained this solera since the early 20th century, adding to it each year whilst withdrawing the requisite amount for bottling. This creates a living archive of flavour, with each bottle containing elements from multiple generations.
In the glass, the ratafia presents a rich amber hue with golden highlights - the visual evidence of age and complexity. The nose is immediately inviting, revealing notes of dried fruit, honey, candied citrus peel, and subtle spice. There's also a gentle oak undertone and a hint of woodsmoke that speaks of patient aging.
