
Dalmore 15 Year Old

Where the Dalmore 12 splits its sherry finish across one style of cask, the 15 spreads it across three: matured in American white oak, then divided between Amoroso, Apostoles and Matusalem oloroso sherry casks before being recombined. The result is a richer, more layered take on the house style, bottled at 40%.
The nose is generous - red apple, cinnamon, dried fruit and a wisp of vanilla, with the trademark orange never far behind. On the palate the three sherry styles give it real breadth: figs and raisins, a little Christmas spice, soft toffee and citrus that keeps it from turning cloying. The finish is long and warming, with dried fruit and a gentle nuttiness that the 12 doesn't quite reach.
This is the Dalmore expression where the sherry character properly hits its stride. It is a sweeter, fuller malt than most Highland drams of this age, and it makes an easy after-dinner pour. Honest value for the depth on offer, and a sensible step up if the 12 has won you over.
How to Serve
Neat in a copita to let the sherry layers separate out. A small splash of water lifts the spice and orange. Best enjoyed slowly after a meal rather than as an aperitif.

Look for Dalmore at the Connaught Bar in Mayfair, Boisdale of Belgravia, and the deep malt list at Soho Whisky Club.
Food Pairings
Richer and nuttier than the 12, so I'd meet it with roast game — venison especially — or a board of aged hard cheese and walnuts. A few dried figs alongside won't go amiss.
