Château Minuty Rose et Or 2025
Minuty sits on the Saint-Tropez peninsula at Gassin, and Rose et Or is the bottle the estate puts its full name behind. Everything in it comes from three estate plots — no bought-in fruit, which in Provence rosé is rarer than the marketing suggests.
The blend is 80% Grenache with 10% Syrah and a little Cinsault and Rolle. Grenache at that weighting is what gives the wine its breadth and its white-peach softness. The Rolle — Vermentino, if you know it by its Italian name — brings the citrus lift and that faint saline snap at the end. Pale pink with crystalline highlights, 12.5%, so it stays light on its feet all afternoon.
The nose is fine rather than loud: citrus, white-fleshed fruit, and the dry scrubby garrigue note you only really get in the south of France. On the palate it's airy and precise, with the kind of tension that stops a rosé this pale from tasting like flavoured water. There's a salinity running underneath that makes the second glass more or less inevitable. Farmed under HVE certification, for whatever that's worth to you.
How to Serve
8–10°C in warm weather, a touch warmer at 10–12°C the rest of the year. Serve it too cold and the aromatics vanish. Use a white wine glass, not a coupe, and don't leave it buried in ice all afternoon.
Where to Drink It
Scott's, on the terrace if you can get it. Bentley's, for shellfish and a bottle on the counter. Dandy at Maltby Street, where it suits the room exactly.
Food Pairings
Grilled prawns with a lot of lemon. That's all it needs — the salinity in the wine and the char on the shells do the rest. For something more substantial, a niçoise, or cold roast chicken with good mayonnaise.
