Passoã Passion Fruit Liqueur 70cl
Passoa is the reason your Pornstar Martini tastes the way it does. That electric-red glow and the rush of ripe passion fruit come almost entirely from this one bottle, and very few people realise how much they rely on it.
The story starts in 1985, when a master distiller from Cointreau travelled to Brazil, tasted maracuja for the first time and came home determined to bottle it. Passoa is made in France using passion fruit juice sourced from Brazil, infused into a spirit base and finished at 17% ABV, which keeps it soft and easy to pour rather than fiery.
In the glass it looks almost like grenadine, deep and glossy. The aroma is unmistakably passion fruit, tangy and sweet, with a berryish edge of strawberry and cherry behind it. The palate is juicy and syrup-sweet with a citrus lift and a faintly floral, tropical finish. It's built to be mixed, not sipped straight, and it shows.
Reach for it whenever you want tropical fruit without squeezing fresh passion fruit yourself. It's the heart of a Pornstar Martini with vodka, vanilla and lime, but it also brightens a spritz over prosecco, lifts a rum punch, and turns an ordinary lemonade into something worth serving at a summer party. Fair value for how much use you'll get out of a single 70cl bottle.
How to Serve
Store it cool and pour it well chilled or straight over ice. It shines in shaken cocktails and long spritzes; a simple pour topped with soda or prosecco is the easiest way in.
Where to Drink It
Swift in Soho and Satan's Whiskers in Bethnal Green both make cracking tropical serves. For something glamorous, the American Bar at The Savoy will happily build you a fruit-forward Martini.
Food Pairings
Try it in a spritz alongside grilled prawns or a plate of ceviche. It also cuts nicely through creamy coconut desserts.
