Cognac Philbert Dovecote - 70cl

Dovecote is the sort of cognac that rewards people who like a story behind the bottle. It comes from a single high-elevation vineyard plot in Petite Champagne, one of Cognac's most prized growing areas, made by the Philbert family from old vines. The fruit off those higher slopes gives a brighter, more perfumed spirit than the region's blends usually manage.

The Philberts are a small, family-run house, and Dovecote is a single-estate expression — old vines, hand-picked plot, distilled and matured with real intent rather than volume in mind. The eaux-de-vie here sit in the four-to-eight-year range and rest in French oak, bottled at 40%.

Pour it and you'll find ripe apricot and pear up front, that classic Petite Champagne fruitiness, rounding into something richer — a note of chocolate cake, soft baking spice, a gentle vanilla warmth from the wood. The palate is round and generous without any heat or harshness, finishing clean and long. It's approachable enough to convert a cognac sceptic and detailed enough to hold a connoisseur's interest.

At this price it's genuinely good value for single-estate cognac — the kind of bottle you bring out to show someone that cognac needn't mean a big commercial name.

How to Serve

Neat at room temperature in a tulip glass, giving the fruit room to open. It's lovely as a slow after-dinner pour, and works over a single ice cube on a warm evening.

Where to Drink It

The Connaught Bar for a refined neat serve. Dukes Bar in St James's for old-world calm. Scarfes Bar at the Rosewood for something more relaxed.

Food Pairings

Beautiful with a dark chocolate tart or a slice of fruit cake. It also stands up nicely to a wedge of Roquefort if you like the sweet-and-salty contrast.
