Glendronach Cask Strength (Batch 12)
18+, T&C apply, Credit subject to status.
Bottled at a hefty 58.2% and left entirely unchilled and uncoloured, GlenDronach Cask Strength Batch 12 is the distillery served straight from the warehouse floor. There is no age statement here, just a marriage of Oloroso and Pedro Ximénez sherry casks selected to show the house style at full volume. This is a whisky that wears its strength openly.
GlenDronach lies in the Eastern Highlands, near Huntly in Aberdeenshire, and it has spent the better part of two centuries championing full sherry-cask maturation. The Cask Strength series is where that philosophy is least diluted, in every sense. Batch 12 pours a deep amber with a red hue and rewards a patient approach.
On the nose, expect mince pie and dark dried fruit, raisin and prune, over mocha and crème brûlée, with toasted hazelnut and a dusting of spice. The palate is earthy and rich: bitter cacao leading into blackberry, allspice and a whiff of that GlenDronach iodine, then cigar box and dried fig. It finishes on bitter chocolate softened by honey and cream. At this strength a good splash of water is not just welcome but useful, opening the fruit and taming the heat.
Pour it when you want the sherried GlenDronach character undressed and honest, on a cold night with the fire lit.
How to Serve
Start neat in a Glencairn to gauge the power, then add water gradually to your taste. At 58.2% it genuinely transforms as it dilutes, so build it up slowly.
Where to Drink It
Black Rock in Shoreditch, whose whisky-led approach suits a cask-strength dram. Soho Whisky Club, for the range and the knowledgeable pour. Boisdale, if you want it with a Scottish supper.
Food Pairings
Rich and sweet works best here: a sticky date pudding, or a mature Cheddar with a spoonful of fig chutney.
