Don Julio Reposado

Reposado means “rested,” and Don Julio's spends around eight months in American white oak — enough for the barrel to round the edges and lend a pale gold colour, not so long that the agave disappears. It's the middle path in the range, and for a lot of drinkers it's the one that clicks.
The fruit comes from Los Altos in the Jalisco highlands, the red-earth country where founder Don Julio González built the house. That gives the 100% Blue Weber agave its brighter, more citrus-led personality, which the short oak rest then softens and sweetens.
The nose is mellow: lemon citrus and light spice over ripe stone fruit, with faint honey and vanilla behind. The palate is soft and elegant — orange, gentle caramel, a little dark chocolate and cinnamon, kept fresh by that highland agave underneath. It finishes silky and warm with dried fruit and a touch of caramel apple. At 38% it's endlessly easy company, equally at home neat or bringing depth to a Tommy's Margarita.
This is the versatile bottle in the cabinet: good enough to sip, characterful enough to lift a cocktail above the ordinary.
How to Serve
Neat in a copita to catch the oak and citrus, or over a large cube on a warm evening. It also makes an outstanding aged Margarita if you want one with more body.
Where to Drink It
Swift in Soho for a well-made agave cocktail. Soho Whisky Club for a straight pour. Tayēr + Elementary for something more experimental.
Food Pairings
Great with grilled chicken and chipotle, or a plate of aged cheddar with quince paste.
