Deanston 15 Year Old Tequila Cask
Two extra years in casks that once held agave spirit from the Jaliscan highlands: that is the twist here, and it works far better than it has any right to. Deanston took a 15-year-old Highland single malt, already matured in oak hogsheads, and finished it in tequila casks. The result keeps its Deanston backbone while picking up a green, citrus-bright edge you won't find anywhere else in the range.
Deanston sits on the banks of the River Teith in Perthshire, a converted cotton mill that only became a distillery in 1965. It runs its own hydroelectric power from the river and bottles unchilled, so what you get is honest, full-textured spirit. This release lands at 52.5% ABV with natural colour, which is why it stays pale gold despite the age.
The nose leads with ripe pineapple and crème brûlée, then lime, honey and green banana, with light oak and a whisper of barrel char underneath. On the palate it turns rich but dry: caramelised agave, toasted almonds, baked apple with custard, and a lick of key lime pie kept in line by warming spice. The finish runs long, all brown spice and sudden bursts of citrus. At full strength it takes a few drops of water gladly, which coaxes out more of the sweetness.
How to Serve
Neat first in a Glencairn to read the agave influence, then loosen it with a little water. Skip ice, which would flatten the citrus lift.
Where to Drink It
Soho Whisky Club, for a bartender who'll happily talk cask finishes with you. Black Rock in Shoreditch, built around its whisky table and made for this sort of curiosity. Boisdale, if you want tartan, live jazz and a proper measure.
Food Pairings
Try it beside a plate of aged Manchego and quince, or something off the grill with a good char on it. The agave note loves salt and smoke, so charred meats do it far more favours than anything sweet.
