Bereche et Fils, Grand Cru, Mailly-Champagne 2016 - 75cl
Mailly-Champagne sits on the northern slopes of Montagne de Reims, where Pinot Noir grapes achieve depth and structure that few other villages can match. The chalk soils run particularly deep here, lending a distinctive minerality to the fruit. Bereche et Fils, a grower producer of extraordinary integrity, has made this village and this terroir the focus of their work. This 2016 vintage expression is their masterpiece.
The 2016 vintage blessed Champagne with concentration and ripeness - ideal conditions for Pinot Noir to develop full character. This is 100% Pinot Noir from Mailly's Grand Cru vineyards, harvested at full ripeness, fermented in temperature-controlled stainless steel, aged extended time on the lees. The cellarmaster's philosophy: patience and precision. No shortcuts. No compromises.
In the glass, this wine presents burnished gold with a fine, persistent mousse. The aromatics are dark and complex: wild cherry, brioche, hints of mushroom and forest floor, beneath it all a mineral spine that speaks of slate and chalk. This is serious fruit from serious terroir. The palate is structured and powerful but never aggressive. Red fruits, subtle oak influence from the traditional cellaring, a salinity that runs through to the finish. The finish is long and dry, with a persistence that builds rather than fades.
This is food champagne - the kind you pair with substance, with richness, with dishes that have their own architecture. Drink now, or cellar confidently for 12 - 15 years. The structure ensures graceful evolution.
How to Serve
Chill to 8 - 10°C. Use a larger white wine glass or tulip to allow this wine's aromatic and structural complexity proper space.
Food Pairings
Roasted game, duck confit, beef tartare, aged Comté, grilled lamb with herbs, or smoked salmon. The power and structure demand food with backbone.
