Dunphail lies in the rolling countryside south of Forres, in the west of Moray, where whisky-making is brought back to its purest form. Here, Visitor Centre Manager Mike begins his day surrounded by tradition and craft, with one cornerstone above all: malting their own barley.

This hands-on process unlocks the sugars that become alcohol, but more than that, it shapes the very first flavours of Dunphail’s spirit. To have such direct control is both rare and vital, giving the distillery its character from the very beginning.

For now, patience is everything. Dunphail’s aspirations rest on the long wait for its single malt to mature - a four-year journey before it can be poured, shared, and savoured. That moment, when the first dram is raised, will mark not just a beginning, but the promise of a future rooted in tradition.
